An ideal go-to for guests, or even just an indulgent meal on those colder evenings.

 

Pumpkin Fondue Night

Ingredients

 

1 medium/large pumpkin

300g of mixed grated mixed cheeses (traditionally gruyere, emmental and cheddar)

2 tsp of cornflour

3 or 4 peeled cloves of garlic

A few glugs of white wine (or more, we don’t judge)

 

Method 

 

  1. Cut the top off the pumpkin and scrape out the fibrous strands and seeds, replace the lid and bake in the oven at 180°C/160°C fan until the pumpkin flesh is cooked, this should take between 1 hour to 1.5 hours.
  2. Meanwhile, mix the cornflour with the grated cheese until it has fully coated the gratings.
  3. When the pumpkin has mostly cooked, remove from the oven, take off the lid and place the grated cheese, white wine and garlic cloves inside, giving it a mix to combine.
  4. Increase the oven temperature slightly and bake for another 30 minutes, or until the cheese is bubbling.

 

Serve with plentiful dipping options, some go-tos include; crusty bread, steamed/roasted baby potatoes, roasted veg or even cubed steak cooked to your liking.
