Pumpkin Fondue Night
Ingredients
1 medium/large pumpkin
300g of mixed grated mixed cheeses (traditionally gruyere, emmental and cheddar)
2 tsp of cornflour
3 or 4 peeled cloves of garlic
A few glugs of white wine (or more, we don’t judge)
Method
- Cut the top off the pumpkin and scrape out the fibrous strands and seeds, replace the lid and bake in the oven at 180°C/160°C fan until the pumpkin flesh is cooked, this should take between 1 hour to 1.5 hours.
- Meanwhile, mix the cornflour with the grated cheese until it has fully coated the gratings.
- When the pumpkin has mostly cooked, remove from the oven, take off the lid and place the grated cheese, white wine and garlic cloves inside, giving it a mix to combine.
- Increase the oven temperature slightly and bake for another 30 minutes, or until the cheese is bubbling.
Serve with plentiful dipping options, some go-tos include; crusty bread, steamed/roasted baby potatoes, roasted veg or even cubed steak cooked to your liking.
